Non-diabetic hypoglycemia is driving me mad.any suggestions or thoughts?

Let me try to explain what is happening to me. I keep getting hypoglycemia even thought I’m not diabetic.
It happens 2 ways, one…sometimes despite eating a 500 calorie balanced non sugary meal within the hour of working out, I get hypo during my routine daily 30 minute cardio workout. I have had some success in countering this by eating a banana 10 mins before I begin working out, but still I feel it’s not normal I have to do this.
The other way is at some point a couple hours after a meal I will start feeling lightheaded/weird and get a pounding heart and very anxious…this is the other way I get it. Then it seems even if I eat my sugar only stays up briefly as I’ve checked serially with many glucose test strips, I have never seen my sugar rise above 115 or so unless I drink a TON of soda or something like that, and even then it’s back down in the 80’s really quick. Again I used a box of nearly 50 test strips in a day to watch just what was going on at 15 minute intervals.
At the doctor I’ve had metabolic panels, a CT scan of my abdomen to look at my pancreas… nothing is seen. Any ideas?
1 thing to point out is that with over night fasts, I am never hypoglycemic, it’s almost always in the 80’s when I wake up

u should get a different doctor u might be diabetic
My only thought is 500 calories it quite bit for one meal then you bottom out because of the excess insulin to eat small.
The excess insulin to cover that meal your pancreas may be putting out because of luck.
